VelvetShaved Cauliflower Salad
Inspired by techniques from Bon Appétit.
Raw cauliflower is shaved paper-thin on a mandoline so it turns silky and almost noodle-like once it sits in a sharp lime-Dijon dressing, with no cooking at all. Torn frisée, lettuce and a double hit of nutritional yeast and Parmesan add bitterness, crunch and a deep savoury edge to the crisp vegetable.

Method
- 1
Whisk the dressing. Whisk the lime zest, lime juice, Dijon mustard and honey together in a large bowl. Whisking constantly, pour in the olive oil in a thin stream until the dressing looks smooth and emulsified. Season with the salt and pepper.
- 2
Dress the cauliflower. Add the cauliflower and 1 tbsp of the nutritional yeast to the dressing and toss well so every slice is coated.
- 3
Add the greens. Add the lettuce, frisée and half the Parmesan. Toss again to combine, then taste and add more salt and pepper if needed.
- 4
Plate and finish. Pile the salad onto a platter and scatter over the remaining Parmesan and the last 1 tsp nutritional yeast. Serve right away while the greens are still crisp.
Storage
Best eaten right away, while the lettuce and frisée are still crisp. The dressing and sliced cauliflower can be kept separately, covered, in the fridge for up to 2 days; once dressed and tossed with the greens, the salad is best eaten within a few hours as the leaves will wilt.
