Roasted Delicata Squash with Olive Oil

Inspired by techniques from Bon Appétit.

Roasted squash · Delicata · American

Thin half-moons of delicata squash roasted with olive oil and salt until tender with lightly browned edges. Leaving the skin on keeps preparation simple, while a single layer lets the squash brown and brings out its natural sweetness.

Method

  1. 1

Heat the oven and slice the squash. Heat the oven to 220 °C (200 °C fan). Halve the squash lengthways and scoop out the seeds with a spoon, leaving the skin on. Set each half cut side down on the chopping board and slice across into half-moons about 6 mm thick.

  2. 2

Season and spread out. Put the squash in the mixing bowl with the olive oil and salt. Toss until the slices are evenly coated, then spread them over the rimmed baking sheet in a single layer, with the flat sides against the metal.

  3. 3

Roast until tender. Roast for 25-30 min, until the edges are lightly browned and the flesh is tender when pierced with the tip of a knife. Check at 25 min and use both cues to judge when it is ready. Lift the squash onto plates with a spatula and serve warm.

Storage

Refrigerate leftovers in a covered container for up to 3 days. Reheat on a baking sheet in the oven until piping hot. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).

EU nutrition claims
