Frisée and Apple Salad with Radish and Parsley

Inspired by techniques from Bon Appétit.

Apple salad · Frisée · American

Bitter frisée and chicory are tossed with crisp apple matchsticks, sliced radish and parsley in a simple shallot-lemon vinaigrette. The mix of bitter leaves, sweet-tart apple and peppery radish gives the bowl plenty of contrast without needing anything cooked.

Method

  1. 1

Make the dressing. Whisk the lemon juice, shallot and lemon zest together in a small bowl. Whisking constantly, drizzle in the olive oil until the dressing comes together, then season with salt and pepper to taste. It can be made up to 2 hours ahead and left at room temperature; rewhisk before using.

  2. 2

Toss the salad. In a large bowl, combine the frisée, chicory, apple matchsticks, radishes and parsley. Pour over the dressing, toss well to coat every piece, and serve right away.

Storage

Best eaten right away once dressed, as the leaves soften within the hour. The undressed frisée, chicory, radish and parsley can be kept separately in an airtight container in the fridge for up to a day; make the dressing separately and toss everything together just before serving.
