Beef tenderloin
Beef tenderloin is the most tender cut on the animal, a long, tapered muscle with almost no connective tissue that cooks quickly and carves into clean, even slices. Tying it into a uniform shape before a hot roast is the main trick to getting it to cook evenly end to end.
