Vietnamese Egg Coffee with Condensed Milk Foam
Inspired by techniques from BBC Good Food.
Egg yolks whisked with sweetened condensed milk and vanilla until pale, thick and foamy, spooned over small glasses of hot, strong espresso. A last splash of coffee stains the sweet foam, and a little grated dark chocolate is optional.
Always check the labels of the products you use.
Method
- 1
Whisk the egg cream. Put the egg yolks, condensed milk and vanilla in a large bowl and whisk with an electric hand whisk for at least 5 min, until pale, thick and foamy.
- 2
Keep the glasses hot. Stand 4 small heatproof glasses or ramekins in slightly larger bowls half-filled with just-boiled water, so the coffee stays hot.
- 3
Assemble. Pour the freshly brewed coffee into the glasses, keeping back 2 tbsp. Spoon the egg foam on top, then drizzle the reserved coffee over so it streaks the foam and sinks in.
- 4
Serve. Scatter over a pinch of grated dark chocolate, if using, and serve straight away with spoons.
Storage
Serve as soon as it is made; the foam can't be stored.
EU nutrition claims
- Source of protein: 3 g protein per 100 kcal, about 12% of energy (needs ≥ 12%)
- Low salt: 0.23 g salt per 100 ml (limit ≤ 0.3 g)
Per 100 ml of the finished dish, worked out from the nutrition per serving and the lowest likely cooked weight (about 84 ml a serving), so the true values are, if anything, lower. Thresholds from the Annex to EU Regulation (EC) No 1924/2006. How we decide
Caffeine · Free sugars
- Per serving: about 106 mg caffeine (serving: 1 glass (50 ml espresso)). Source: 50 ml espresso × USDA FDC SR Legacy #171891 (espresso, 212 mg/100 g); the optional pinch of dark chocolate adds about 1 mg.
- Scaling: making more servings does not change the caffeine in each serving; what counts is how many servings you drink in a day. 1 serving: 106 mg · 2 servings: 212 mg (above EFSA 200 mg at once) · 3 servings: 318 mg (above EFSA 200 mg at once) · 4 servings: 424 mg (above EFSA 400 mg a day).
- General guideline: EFSA Scientific Opinion on the safety of caffeine (2015): for healthy adults, up to 200 mg in a single dose and up to 400 mg per day do not raise safety concerns. 1 serving = 27 % of 400 mg. EFSA
