Shaved Cauliflower with Olive Oil

Inspired by techniques from Bon Appétit.

Cauliflower · Shaved · American

Raw cauliflower is shaved paper-thin on a mandoline so it turns tender and almost delicate, then simply dressed with olive oil, salt and pepper. It's less a cooked side than a crisp little salad, ready in minutes with no stove involved.

Method

  1. 1

Shave the cauliflower. Using a mandoline fitted with its hand guard, very thinly slice the cauliflower into a medium bowl.

  2. 2

Dress and season. Drizzle the olive oil over the cauliflower and toss to coat. Season with the salt and pepper, then toss again.

  3. 3

Taste and serve. Taste and add more salt and pepper if needed before serving.

Storage

Best served right after dressing, while the cauliflower is still crisp. Undressed shaved cauliflower keeps refrigerated in an airtight container for up to 1 day.

EU nutrition claims
