Shaken Iced Coffee Frappé with Milk
Inspired by techniques from Serious Eats and NYT Cooking.
Instant coffee, sugar and cold water are shaken hard into a dense foam, shaken again with ice, and finished with cold milk poured down the side of the glass.
Always check the labels of the products you use.
Method
- 1
Shake the foam. Shake the coffee, sugar and water hard in a closed shaker for 30-60 seconds until thick and foamy.
- 2
Add ice. Add the ice and shake 1 minute more until very cold.
- 3
Pour. Tip everything into a tall glass, spooning the last of the foam on top.
- 4
Add the milk. Pour the milk slowly down the tilted glass so the foam floats.
- 5
Serve. Add a straw and drink at once.
Storage
Make and drink fresh; the foam collapses on standing. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).
Equipment
- cocktail shaker or jam jar with a tight lid (or a milk frother)
- tall glass
- straw
