Roasted Green Beans

Inspired by techniques from America's Test Kitchen.

Green beans · Roasted · American

Green beans roasted on a very hot tray until they are tender, sweet and spotted with brown, with nothing more than olive oil, salt and pepper. Hands-off, quick and far more flavourful than boiled beans.

Method

  1. 1

Heat the oven. Heat the oven to 230 °C (210 °C fan) with a shelf in the middle. Line the baking tray with foil, which stops the beans sticking and makes washing up easy.

  2. 2

Season. Spread the beans on the tray, drizzle with the oil, sprinkle with the salt and pepper and toss with your hands until every bean is lightly coated. Spread them into a single layer so they roast rather than steam.

  3. 3

Roast. Roast 10 min, then toss with tongs and spread out again. Roast 10-12 min more, until the beans are tender, slightly shrivelled and browned in spots. The browning is where the nutty, sweet flavour comes from.

  4. 4

Serve. Taste, add a little more salt if needed and serve hot.

Storage

Best served hot. Refrigerate covered up to 3 days and reheat on a hot tray or in a frying pan until piping hot (74 °C). Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).

EU nutrition claims

  • Source of protein: 3.2 g protein per 100 kcal, about 13% of energy (needs ≥ 12%)
  • Low saturated fat: 0.6 g saturated fat per 100 g, 6.9% of energy (limits ≤ 1.5 g and ≤ 10%)
  • Low sugars: 4.6 g sugars per 100 g (limit ≤ 5 g)
  • High fibre: 4.8 g fibre per 100 kcal (needs ≥ 3 g)

Per 100 g of the finished dish, worked out from the nutrition per serving and the lowest likely cooked weight (about 81 g a serving), so the true values are, if anything, lower. Thresholds from the Annex to EU Regulation (EC) No 1924/2006. How we decide
