Olive Oil Roasted Sweet Potatoes

Inspired by techniques from Bon Appétit.

Sweet potatoes · Olive Oil · American

Chunks of sweet potato are tossed with olive oil, salt and pepper and roasted hot until the edges caramelise and the centres turn soft. It's the plainest way to roast them, and a good base for whatever spices or sweet glaze you want to add after.

Method

  1. 1

Heat the oven. Place a rack in the middle of the oven and heat it to 230 °C (210 °C fan).

  3. 3

Serve. Serve warm, or let cool completely and refrigerate in an airtight container for up to 3 days.

Storage

Can be roasted up to 3 days ahead: let cool, then refrigerate in an airtight container and reheat before serving. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).

EU nutrition claims

  • Low saturated fat: 0.8 g saturated fat per 100 g, 4.3% of energy (limits ≤ 1.5 g and ≤ 10%)
  • Source of fibre: 2.5 g fibre per 100 kcal (needs ≥ 1.5 g)

Per 100 g of the finished dish, worked out from the nutrition per serving and the lowest likely cooked weight (about 249 g a serving), so the true values are, if anything, lower. Thresholds from the Annex to EU Regulation (EC) No 1924/2006. How we decide
