Honey and Garlic Roasted Aubergines

Inspired by techniques from Bon Appétit.

Roasted aubergines · Honey-Garlic · American

Whole aubergines are pierced, doused in olive oil and roasted at a fierce heat with whole garlic cloves until the skins char and the flesh collapses into something custardy. A honey-spiked pan glaze, whisked together at the end, turns the charred juices into a sweet, savoury finish.

Method

  1. 1

Heat the oven. Preheat the oven to 260°C (240°C fan).

  2. 2

Pierce the aubergines. Using a two-pronged fork, pierce the aubergines at least 6 times per side, pushing in at least halfway through the flesh each time.

  3. 3

Set up the skillet. Place the aubergines and garlic cloves in a large cast-iron or other heavy ovenproof skillet, pour the oil over everything, and sprinkle with the salt.

  4. 4

Roast. Roast until the aubergines are tender, charred and slightly deflated, basting twice with the skillet juices, 15-20 minutes.

  5. 5

Rest and halve. Let the aubergines rest for 15 minutes, then cut each one in half lengthwise. Arrange the halves and the garlic cloves on a platter.

  6. 6

Glaze and season. Whisk the honey into the juices left in the skillet, then spoon the mixture over the aubergines and garlic. Season to taste with more salt and the pepper.

Storage

Best eaten warm, freshly roasted and glazed. Refrigerate any leftovers covered for up to 2 days and reheat gently in a low oven before serving.
