Herbed New Potatoes

Inspired by techniques from Bon Appétit.

New potatoes · Herbed · American

New potatoes steamed until tender, then finished in a hot frying pan with garlic and a handful of soft herbs so the cut sides pick up a little colour. Steaming first and sautéing second means the potatoes can be made mostly ahead and finished in minutes just before serving.

Method

  1. 1

Steam the potatoes. Steam the potatoes until tender, about 9 minutes. They can be steamed up to 2 hours ahead and left at room temperature.

  2. 2

Sauté the garlic. Heat the oil in a large frying pan over medium-high heat. Add the garlic and stir for 30 seconds.

  3. 3

Finish the potatoes. Add the potatoes and herbs, sprinkle lightly with the salt and pepper, and sauté until the potatoes are heated through and golden, about 8 minutes.

  4. 4

Season and serve. Season with more salt and pepper to taste, transfer to a bowl and serve.

Storage

Best served warm, right after sautéing. Leftovers keep covered in the fridge for up to 3 days; reheat in a hot frying pan. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).
