Mixed Green Salad with Strawberry Dressing
Inspired by techniques from Bon Appétit.
Mixed baby greens are tossed with feta, toasted walnuts and whole strawberries, then dressed with a vinaigrette whisked with mashed berries so it turns pink and genuinely fruity. It is a quick way to make a plain green salad feel like a proper course.
Always check the labels of the products you use.
Method
- 1
Mash strawberries for the dressing. Mash enough of the halved strawberries to make about 75 g of pulp; set it aside. Put the remaining strawberries in a large bowl.
- 2
Build the salad base. Add the mixed greens, feta and toasted walnuts to the bowl with the strawberries.
- 3
Make the dressing. Whisk the oil, balsamic vinegar and sugar together in a small bowl. Whisk in the mashed strawberries, then season with the salt and pepper.
- 4
Dress and serve. Pour the dressing over the salad and toss to coat. Serve right away.
Storage
Best assembled and dressed just before serving, as the greens wilt within an hour. Keep any leftover dressing in a covered container in the fridge for up to 3 days and toss with fresh greens.
