Method

  1. 1

Prepare the coating. Sift the cocoa and icing sugar together onto a shallow plate. A touch of sugar softens the bitterness of the cocoa without making the coating sweet.

  2. 2

Make the ganache. Tip the chopped chocolate and salt into the heatproof bowl. Bring the cream just to a simmer, pour it over, leave for 2 min, then stir from the middle outwards until the mixture is smooth and shiny. Chopping the chocolate finely means it melts evenly without lumps.

  3. 3

Let it set. Scrape the ganache into the lined dish and refrigerate for about 45 min, until it is firm enough to hold a scoop.

  4. 4

Portion. Scoop out 24 heaped teaspoons and set them on a plate. Chill for 30 min more so they are easy to handle.

  5. 5

Roll. Working quickly with cool hands (or gloves), roll each portion into a rough ball. They do not need to be perfect; real truffles are a little irregular.

  6. 6

Coat and chill. Roll the balls in the cocoa mixture, shake off any excess and refrigerate for 30 min. Take them out 10 min before serving so the centres soften.

Storage

Keep in an airtight container in the fridge for up to 1 week, with a little extra cocoa to stop them sticking. Serve after 10 min at room temperature.
