Pastry case
- 150 g plain flour, plus extra for rolling
- 35 g icing sugar
- 1 g fine sea salt or table salt a pinch
- 95 g cold unsalted butter, cubed
- 1 large egg yolk
- 1 tbsp cold water
Apples
- 500 g Braeburn or Fuji apples, peeled, cored and cut into 1 cm dice (prepared weight)
- 1 tbsp lemon juice
- 15 g unsalted butter
- 50 g demerara sugar
- 1½ tsp vanilla
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
Almond crunch
- 2 large egg whites (60 g)
- 30 g caster sugar
- 50 g slivered almonds
- 1
Pastry case. pulse the flour, icing sugar and salt, add the butter and pulse to crumbs, then the yolk and water until it clumps. Wrap and chill 30 min. Roll out, line the tin and chill 20 min.
- 2
Blind bake. heat the oven to 190 °C (170 °C fan). Bake with paper and beans for 20 min, then uncover for 8-10 min, until fully golden. Turn the oven down to 180 °C (160 °C fan).
- 3
Apples. toss the diced apples with the lemon juice and line a tray with paper. Heat the butter in the frying pan over high heat until it foams and turns light brown, then add the apples, demerara, vanilla and spices.
- 4
Caramelise. spread the apples out and leave them for 2 min, then cook over medium-high heat, stirring, for 5-7 min, until golden. Spread on the tray and cool completely. Leaving the apples still at first gives them good colour.
- 5
Almond crunch. whisk the egg whites just until frothy, whisk in the caster sugar and stir in the almonds. Only whisk until foamy; this is not a meringue.
- 6
Bake. spread the apples in the case, spoon the almond mix evenly over and bake on a tray for 30 min, until the topping is golden. Cool on the rack.

Storage
Best on the day the topping is crisp. Keep leftovers covered at room temperature overnight.
