Topping
- 100 g walnuts, roughly chopped
- 85 g unsalted butter
- 150 g light brown soft sugar
- 1 g fine sea salt or table salt a pinch
- 6 large ripe but firm bananas
Pastry
- 170 g plain flour, plus extra for rolling
- 25 g icing sugar
- 1.5 g fine sea salt or table salt about ¼ tsp
- 110 g cold unsalted butter, diced
- 1 large egg, beaten
- 1
Make the pastry. whizz or rub the flour, icing sugar, salt and butter to crumbs, add the egg and bring it together. Wrap the disc and chill 30 min.
- 2
Toast. heat the oven to 190 °C (170 °C fan). Dry-fry the walnuts in the pan over medium heat, stirring, for about 2 min until fragrant, then tip onto a plate.
- 3
Brown sugar base. melt the butter in the same pan, stir in the brown sugar and salt until smooth and bubbling, then take it off the heat and scatter the walnuts over.
- 4
Bananas. peel them, halve lengthwise, then cut each half in two. Lay them rounded side down in snug circles on the nuts. Ripe but firm bananas, still a little green at the stem, hold together best.
- 5
Simmer. return the pan to medium heat for 5 min, until the sauce bubbles up round the fruit.
- 6
Top and bake. roll the pastry 2 cm wider than the pan, drape it over and tuck in the edge. Bake 25-30 min until golden, then leave 10 min.
- 7
Flip. loosen the edge with the knife, cover with the plate and, using tea towels, turn it over in one go. Serve warm, with vanilla ice cream if you like. Any sauce left in the pan can be spooned back over the top.

Storage
Best eaten warm on the day; bananas darken as they stand. Cover and chill leftovers for up to 1 day.
