Pastry
- 190 g plain flour, plus extra for rolling
- 25 g caster sugar
- 1.5 g fine sea salt or table salt about ¼ tsp
- 150 g cold unsalted butter, diced
- 2 large egg yolks
- 1 tbsp cold water
Apples
- 180 g granulated sugar
- 1.4 kg Granny Smith apples (about 7 large), peeled, quartered and cored
- 30 g unsalted butter, melted
- 1 tbsp fresh rosemary leaves, finely chopped
- 1
Crust. pulse the flour, sugar and salt, add the butter and pulse until mostly blended. Beat the yolks with the water, add and pulse just until it starts to clump. Flatten, wrap and chill.
- 2
Syrup. melt the sugar in the pan over medium-low heat, stirring once it starts to liquefy, until it is a clear caramel-coloured syrup. Remove from the heat.
- 3
Season. toss the apple quarters with the melted butter and rosemary in the bowl.
- 4
Pack. set a first ring of apples on the syrup cored side down, then a second layer on top cored side up, in tight circles.
- 5
Steam and boil. cover and cook over medium heat for 5 min, then uncover and cook 10 min more. Leave to cool a little while the oven heats to 180 °C (160 °C fan). The lid softens the apples quickly; uncovering lets the juice cook off.
- 6
Seal. roll the dough slightly wider than the pan, lay it on the apples and press the edge against the sides. Bake about 30-35 min, until lightly browned. Pressing the edge against the pan holds in the steam so the apples finish cooking.
- 7
Serve. stand 10 min, then put the plate on top and flip it over quickly with oven gloves. Serve warm.

Storage
Keep covered at room temperature for up to 1 day or in the fridge for 3 days. Warm before serving.
