Upside-down

Upside-down cakes are baked with fruit and a sugary layer at the base of the tin, then flipped once cooked so that caramelised fruit becomes the finished top. The style took hold in American home baking in the early twentieth century, loved for turning a handful of tinned or fresh fruit into a glossy, dramatic centrepiece with very little fuss.
