Malloreddus
Malloreddus are small ridged semolina pasta shells from Sardinia, traditionally shaped by hand along a wooden board or the tines of a fork. Often tinted and flavoured with saffron, they're prized for their firm bite and the way their ridges hold onto a simple tomato sauce.
