Japanese cotton cheesecake
Japanese cotton cheesecake, also called soufflé cheesecake, is a tall, pale, wobbly cake that behaves more like a soufflé than a traditional baked cheesecake. It gets its name from its famously light, cottony texture, achieved by folding a meringue through a small amount of cream cheese batter.
