Rhubarb syrup
- 300 g rhubarb, cut into 1 cm pieces
- 350 ml water
- 45 g caster sugar
Tea
- 5 English breakfast tea bags
- 1 l freshly boiled water
- 1 l cold water
To serve
- 250 g strawberries, hulled and sliced
- 400 g ice
- 1
Tea. Pour the boiling water over the tea bags in a large heatproof jug and steep for 4 minutes, then lift the bags out without pressing; squeezing them releases bitter tannins. Add the cold water, let it cool and chill for at least an hour.
- 2
Rhubarb syrup. While the tea cools, simmer the rhubarb with the water and sugar over medium-low heat for 12-15 minutes, stirring now and then, until it breaks into shreds and the liquid turns pink.
- 3
Strain. Set a sieve over a bowl, tip in the rhubarb and let the syrup drip through for 10 minutes, pressing gently. Discard the pulp, then cool and chill the syrup.
- 4
Combine. Stir the syrup into the cold tea and taste. Very tart rhubarb may want a spoonful more sugar.
- 5
Serve. Layer the strawberry slices with ice in tall glasses and pour the tea over.
Storage
Keep the tea and the syrup in the fridge for up to 3 days, apart or mixed. Slice the strawberries just before serving. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).
