Strawberry base
- 2 lemons, scrubbed zest only; then juice them
- 340 g ripe strawberries, hulled and quartered
- 150 g granulated sugar
Lemonade
- 240 ml fresh lemon juice from 6-8 lemons, including the 2 above
- 1.4 l cold water
To serve
- 800 g ice
- 1 lemon, sliced into rounds
- 6 strawberries, halved, to garnish
- 1
Macerate. Finely grate the zest of 2 lemons over the strawberries and sugar in a large bowl. Toss and leave for 45 minutes at room temperature, stirring now and then, until the sugar has melted into a red syrup. The zest adds lemon oil that juice alone cannot.
- 2
Juice. Meanwhile, juice the zested lemons and enough extra lemons to make 240 ml.
- 3
Mash. Crush the berries thoroughly with a potato masher. Stir in the lemon juice and 500 ml of the cold water until no grains of sugar remain.
- 4
Strain. Press everything through a fine sieve into the jug and discard the pulp. Stir in the remaining 900 ml of water, taste, and add a splash more water if it is too sharp.
- 5
Serve. Chill, or pour straight over ice. Add lemon rounds and strawberry halves to the jug.
Storage
Keep covered in the fridge for up to 2 days. Add the garnish just before serving. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).
