Strawberry Eton Mess
Inspired by techniques from America's Test Kitchen and NYT Cooking.

Always check the labels of the products you use.
Method
- 1
Meringue. heat the oven to 100 °C (80 °C fan) and line the tray. Mix the sugar and cornflour. Whisk the whites, vanilla and salt until frothy, then add the sugar mix slowly and whisk to stiff, glossy peaks. Pipe or spread in thin zigzag strips. Cornflour helps the meringue stay crisp.
- 2
Bake. bake 1 h 30 min until dry outside, then switch the oven off and leave 1 h to crisp. Cool. Drying in the oven makes the meringue crisp all the way through.
- 3
Berries. quarter 350 g of the strawberries and toss with 15 g of the sugar and the lemon juice. Mash the rest with the remaining sugar in the pan and boil 5 min to a thick sauce; cool. The cooked sauce adds deep colour and flavour.
- 4
Cream. whip the cream and icing sugar to soft peaks.
- 5
Assemble. break the meringue into bite-size pieces. Just before serving, fold the meringue, half the sauce and most of the berries roughly through the cream, pile into the bowls and spoon over the rest of the sauce and berries. Folding at the last moment keeps the meringue crunchy.

Common mistake
A common mistake is mixing too early; the meringue goes soft in minutes.
More from the cat
- Make the meringue up to a week ahead and keep it airtight.
- Do not overwhip the cream; soft peaks fold best.
