Spiced Lamb Pita Burgers

Inspired by techniques from Bon Appétit.

Lamb burger · Spiced · Middle Eastern

Ground lamb is mixed with onion, parsley, coriander, cumin and cinnamon, then packed straight into pita pockets and grilled until the bread is crisp and the filling is cooked through. It eats like a burger without a bun, with warm spice in every bite.

Method

  1. 1

Mix the filling. In a large bowl, combine the lamb, onion, parsley, coriander, cumin, cinnamon, salt, pepper and olive oil, mixing with a fork until evenly combined. Cover and chill for at least 1 hour.

  2. 2

Stuff the pitas. Heat a grill to medium heat and oil the grate. Working one at a time, cut along the seam of each pita about halfway round to open a pocket. Spoon the lamb filling into each pita, spreading it right out to the edges, then press the opening closed to seal.

  3. 3

Grill. Grill the stuffed pitas until the filling is cooked through and the bread is crisp, about 5 minutes per side. Check with an instant-read thermometer that the center of the filling has reached at least 71°C.

Storage

Best grilled and eaten fresh. Refrigerate leftover cooked filling in an airtight container for up to 3 days and reheat until piping hot (71°C) before serving. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).
