Dough
- 420 g plain flour
- 6 g instant (fast-action) dried yeast
- 2 tbsp fresh sage, finely chopped or 2 tsp dried
- 8 g fine sea salt about 1⅓ tsp
- 2 large eggs beaten
- 55 g unsalted butter softened
- 115 ml water lukewarm, about 38 °C
- 115 ml whole milk lukewarm
To brush
- 45 g unsalted butter melted
- 1
Dough. Mix and knead all the dough ingredients for 8-10 min, until soft and smooth but not sticky.
- 2
Rise. Cover and leave about 1 1/2 h, until doubled.
- 3
Cut. Divide the dough in half. Roll one half into a 22 cm circle and cut it like a cake into 9 long triangles.
- 4
Roll up. Starting from the wide end, roll each triangle towards its point and set it point side down on a tray, bending the ends into a gentle curve. Brush with some of the melted butter, then repeat with the second half.
- 5
Prove. Cover loosely and leave 25-35 min, until puffy but not doubled. Heat the oven to 180 °C (160 °C fan).
- 6
Bake. Bake about 18-20 min, until golden; the thickest part reads 88-90 °C. Brush with the rest of the butter and serve warm.
Storage
Keep cooled rolls in an airtight bag at room temperature for up to 2 days. Rewarm at 180 °C for 5 min; freeze for up to 1 month. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).
