Granita
- 90 g caster sugar
- 100 ml water
- 3 mint sprigs (about 5 g)
- 400 ml 100% pomegranate juice
- ½ tsp rose water
To serve
- 40 g pomegranate seeds, to serve
- 2 tsp dried edible rose petals, food-grade and unsprayed
- 1
Syrup. Combine 90 g caster sugar and 100 ml water in a small saucepan. Heat while stirring until the sugar is dissolved and the liquid reaches a boil.
- 2
Infuse. Add 3 sprigs of mint and simmer for 1 min on medium-low heat. Let the mixture cool for about 20 min, then strain through a sieve into a large bowl, pressing on the mint.
- 3
Combine. Whisk 400 ml pomegranate juice and ½ tsp rose water into the mint syrup. Pour the liquid into a shallow freezer container.
- 4
First freeze. Place the container in the freezer for 2-3 h until the edges are solid. Break up the ice with a fork and return to the freezer.
- 5
Scrape. Freeze for another 2 h and fork again to create crystals. Repeat this for 8-10 h in total until the mixture is completely frozen into fine shards.
- 6
Serve. Spoon the granita into small glasses. Scatter the 40 g pomegranate seeds and 2 tsp dried edible rose petals over the portions.
Storage
Keep the container covered in the freezer for up to 1 week and use a fork to break up the crystals before serving.
