Method

  1. 1

Preheat the oven. Preheat the oven to 220°C (200°C fan) at least 20 minutes ahead, with racks set in the upper and lower thirds, and line two baking trays with baking paper. A fully preheated oven and high heat are essential here, since sweet potatoes hold more water and sugar than ordinary potatoes and need strong, direct heat to crisp rather than steam.

  2. 2

Mix the spice blend. In a small bowl, stir together the paprika, garlic powder, cayenne, salt and pepper. Having this ready means it can be tossed through the fries the moment they come out of the oven, while they're still hot enough for the spices to cling.

  3. 3

Coat the sticks. Toss the sweet potato sticks with the cornflour in a large bowl until no dry powder remains visible, then toss again with the oil. The thin starch coating dries into a crisp shell in the oven, helping to offset the extra moisture and sugar in sweet potato that would otherwise leave the fries soft.

  4. 4

Spread and roast. Divide the sticks between the two trays in a single layer, leaving space between each piece, since crowding causes them to steam rather than crisp. Roast for 15 minutes, then flip and swap the trays between the racks for another 10-15 minutes, until browned at the edges and crisp.

  5. 5

Season while hot. Toss the hot fries with the spice mix as soon as they come out of the oven, then serve straight away. Seasoning them while hot helps the spices stick to the crisp coating rather than falling off.

Storage

Best eaten fresh; leftovers keep in the fridge for up to 2 days but will soften. Reheat in a hot oven until piping hot (74°C) to bring back some crispness - the microwave will leave them limp; freezing isn't recommended. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).
