Method
- 1
Heat. heat the oven to 150 °C (130 °C fan). Draw a 22 cm circle on baking paper, turn it over onto the tray. Mix the sugar with the cornflour.
- 2
Whisk. whisk the egg whites and salt on medium until soft peaks, then add the sugar mix a spoonful at a time, 30 s apart. Whisk on high 5-8 min more until very thick and glossy and a pinch feels smooth, not gritty. Whisk in the vinegar and vanilla. Adding the sugar slowly lets it dissolve, so the meringue does not weep.
- 3
Shape. pile the meringue into the circle and spread it into a round with slightly higher sides and a shallow hollow in the middle, sweeping the sides upwards with the spatula.
- 4
Bake. put it in, lower the oven at once to 120 °C (100 °C fan) and bake 1 h 15 min until crisp and pale cream, and it lifts off the paper cleanly. Turn off the oven and leave the meringue inside with the door ajar until cold, at least 2 h. Cooling slowly in the oven stops large cracks.
- 5
Top. just before serving, whip the cream with the icing sugar to soft peaks and spoon it into the hollow. Scatter over the strawberries, kiwi and blueberries, then scoop the passion fruit pulp over the top. Serve straight away.

Common mistake
A common mistake is a greasy bowl; any fat or yolk stops the whites from whipping.
More from the cat
- Cracks are normal, and the cream will cover them.
- Top only at the last minute, as cream and fruit soften the meringue.
Storage
Keep the plain meringue in an airtight box at room temperature for up to 2 days. Once topped, eat within 2 hours; chill leftovers and eat within 1 day.
