Pasta
- 225 g dried cheese tortellini
Chicken
- 680 g boneless, skinless chicken thighs, trimmed and cut into 2 cm pieces
- 60 ml honey
- 3 tbsp gochujang
- 3 tbsp soy sauce
- 1 tbsp toasted sesame oil
- 2 garlic cloves, finely chopped
- 2 tsp finely grated fresh ginger
Topping
- 225 g fontina, grated
- 2 spring onions, thinly sliced on the diagonal
- 1
Heat. Turn the grill to high with a shelf roughly 20 cm beneath it.
- 2
Glaze. In an ovenproof pan, stir together 60 ml honey, 3 tbsp gochujang, 3 tbsp soy sauce, 1 tbsp sesame oil, 2 chopped garlic cloves and 2 tsp grated ginger.
- 3
Cook. Turn 680 g chicken thigh pieces through the glaze, put a lid on and let them bubble on a medium-high hob for 10-15 min, giving the pan a stir every few minutes, until cooked through.
- 4
Boil. Meanwhile, bring 2000 ml water to the boil and cook 225 g tortellini until tender, then drain.
- 5
Combine. Take the pan off the heat, fold the tortellini into the sticky chicken and cover the top with 225 g grated fontina.
- 6
Grill. Slide under the grill for 2-5 min, until the cheese has melted and is just starting to bubble, then scatter with 2 sliced spring onions and serve.

Storage
Best enjoyed fresh from the grill while the cheese is molten. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).
