Pastry
- 170 g plain flour, plus extra for rolling
- 30 g icing sugar
- 1.5 g fine sea salt or table salt about ¼ tsp
- 115 g cold unsalted butter, in 1 cm cubes
- 1 large egg yolk (keep the white)
- 2 tbsp cold water
Almond sponge
- 115 g unsalted butter, soft
- 100 g caster sugar
- 1.5 g fine sea salt or table salt about ¼ tsp
- 120 g ground almonds
- 30 g plain flour
- 1 large egg, plus the saved white
- ¾ tsp almond flavouring
- 80 g raspberry jam
- 45 g flaked almonds
- 1
Pastry. mix the flour, icing sugar and salt, scatter over the butter and rub it in until sandy. Add the yolk and water and work gently into a dough.
- 2
Line. roll to a 30 cm circle and fit it into the tin. Trim to leave 1 cm overhang, fold it inwards to thicken the sides and prick the base with the fork. Freeze 30 min while the oven heats to 200 °C (180 °C fan). Folding the overhang in gives strong sides.
- 3
Blind bake. line with paper and beans and bake on the tray 20 min, then uncover and bake 5-10 min, until the base is pale golden. Turn the oven down to 180 °C (160 °C fan).
- 4
Almond sponge. beat the butter, sugar and salt until pale and fluffy, then mix in the ground almonds, flour, whole egg, egg white and almond flavouring.
- 5
Fill. spread the jam over the warm base, spoon the almond mix on top, smooth it to the edges and scatter with the flaked almonds. Spoon the sponge mix over in dollops so the jam doesn’t smear.
- 6
Bake. 35-40 min, until golden and a cocktail stick comes out clean. Cool completely on the rack.
