Method

  1. 1

Almond cream. beat the butter and icing sugar until creamy, then beat in the ground almonds, flour and salt. Beat in the egg, then the yolk and the flavourings. Chill 30 min until firm enough to pipe.

  2. 2

Roll. cut the pastry in 2, one piece a little larger. Roll the smaller piece 3 mm thick and cut a 24 cm round; roll the larger piece and cut a 27 cm round. Put the small round on the lined tray.

  3. 3

Dome. pipe or spoon the almond cream into a 15 cm mound, 3 cm high in the middle, leaving a wide border. Beat the yolk with the milk and brush it on the border. Lay the large round over, press it close round the dome to push out air, then press the border firmly to seal. Chill 30 min. Pressing out trapped air stops the top layer from ballooning and splitting.

  4. 4

Decorate. trim the edge into scallops with the knife. Brush the dome with egg glaze, then score curved lines from the top down to the base about 1.5 cm apart, cutting only the surface. Make a small steam hole in the top and chill 30 min. Heat the oven to 200 °C (180 °C fan).

  5. 5

Bake. bake 25 min until risen and golden. Mix the golden syrup with the hot water, brush it over the top, lower the oven to 180 °C (160 °C fan) and bake 15-20 min more until deep amber and shiny; the cream inside should reach at least 75 °C. The syrup glaze gives the deep, glossy finish of a bakery pithivier.

  6. 6

Cool. cool on the rack 20 min and serve slightly warm, cut with a serrated knife.

Storage
