Method

  1. 1

Start in cold water. Rinse the chicken pieces under cold water and put them in the stockpot with the cold water, so they are covered by about 5 cm. Starting cold lets the proteins release slowly and rise as foam, which keeps the stock clear.

  2. 2

Heat slowly and skim. Bring the pot to just below a simmer over medium heat, which takes 30-40 minutes. As grey foam gathers on the surface, skim it off with the ladle. Removing it now stops it being churned back into the liquid.

  3. 3

Add the aromatics. Add the onions, carrots, celery, garlic, peppercorns, bay, thyme and parsley and push them under the surface. Adding them after skimming means you lose none of their flavour with the foam.

  4. 4

Simmer barely. Keep the stock at the barest simmer, uncovered, with only an occasional bubble breaking the surface (about 90 °C), for 3 hours. Do not stir or let it boil, as agitation emulsifies the fat and clouds the stock. Skim now and then and top up with a little hot water if the bones poke out.

  5. 5

Strain without pressing. Ladle the stock through the sieve, lined with damp muslin if you have it, into the heatproof bowl, and do not press the solids. Discard the bones and vegetables. You should have about 3 litres of clear stock.

  6. 6

Cool quickly. Stand the bowl in the iced water and stir now and then until the stock drops below 21 °C within 2 hours, then refrigerate. Next day, lift off the set fat in one layer. The stock is unsalted, so season whatever dish you use it in.

  7. 7

Store. Pour into lidded containers and refrigerate for up to 4 days or freeze for up to 3 months. Always bring it to the boil before using.
