Cherry and Lime Iced Tea
Inspired by techniques from America's Test Kitchen.
A sweet-tart iced tea that tastes like a cherry lime soda without the fizz: black tea, cherry juice and a zesty lime syrup, with fresh cherries in the glass.

Lime syrup
- 100 g caster sugar
- 100 ml water
- 2 limes: finely grated zest and juice
Tea
- 6 black tea bags
- 500 ml freshly boiled water
- 500 ml cold water
- 500 ml unsweetened cherry juice
To serve
- 100 g fresh cherries, pitted and halved, plus lime slices to garnish
- 500 g ice
- 1
Lime syrup. Warm the sugar and water until the sugar dissolves, then take the pan off the heat, add the lime zest and leave it for 15 minutes to infuse. Strain, then stir in the lime juice; adding the juice off the heat keeps it fresh-tasting.
- 2
Tea. Steep the tea bags in the boiling water for 5 minutes, lift them out and top up with the cold water.
- 3
Mix. When the tea is cool, stir in the cherry juice and 5-6 tbsp of the lime syrup. Taste, adjust and chill for at least an hour.
- 4
Serve. Drop a few cherry halves and a lime slice into each glass, add ice and pour in the tea.
Storage
Keeps 3 days in the fridge. The lime syrup keeps 1 week in a sealed jar. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).
