Chamomile and Lavender Herbal Infusion with Lemon
Inspired by techniques from America's Test Kitchen.
A caffeine-free, delicate infusion of dried chamomile and lavender flowers with bright lemon notes.
None of the 14 major EU allergens. Always check the labels of the products you use.
Method
- 1
Mix. Mix 6 tbsp dried chamomile flowers and 2 tbsp dried culinary lavender in a jar to make about 8 tbsp blend.
- 2
Brew. Put 4 tbsp blend and 4 thin lemon slices in a glass teapot or its strainer.
- 3
Steep. Pour over 960 ml just-boiled water, cover so the aroma stays in, and steep 5 min (up to 7 for stronger brew; be careful as lavender turns soapy if overdone).
- 4
Strain. Strain into mugs and add a lemon slice to each.
- 5
Serve. Sweeten with honey if liked and serve hot.

Cat tip
Keep the teapot covered while steeping to trap the fragrant oils and prevent over-steeping.
More from the cat
- Lavender can turn soapy if steeped too long; 5 minutes is usually ideal.
Storage
The dried blend keeps airtight and away from light for up to one month. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).
