Method
- 1
Cook the apple. Melt the 15 g butter in the small frying pan and add the diced apple, brown sugar, cinnamon and lemon juice. Cook over medium heat for 6-8 min, stirring, until tender and coated in a light syrup, then leave to cool.
- 2
Mix the dry ingredients. Whisk the flour, baking powder, sugar, cinnamon and salt together in a bowl.
- 3
Add the wet ingredients. Beat the egg yolks with the milk, melted butter and vanilla, then whisk into the dry mix until just smooth. A few small lumps are fine.
- 4
Fold in the whites. Whisk the egg whites in a clean bowl to soft peaks and fold them into the batter in two additions, keeping as much air as possible. This makes the balls light and puffy.
- 5
Heat the pan. Warm the æbleskiver pan over medium-low heat for 3-4 min, then brush each hollow generously with butter.
- 6
Fill the hollows. Spoon about 1 tbsp batter into each hollow, add a teaspoon of apple, and cover with another tablespoon of batter so each hollow is nearly full.
- 7
Turn into balls. After 3-4 min, when the undersides are golden, use the skewers to turn each one a quarter turn so the uncooked batter flows into the hollow. Keep turning every minute or so for about 3 min more, until they are round and golden all over and a skewer comes out clean.
- 8
Serve warm. Cook the remaining batter the same way, buttering the pan between batches. Dust with icing sugar and serve hot with the jam for dipping.

Common mistake
A common mistake is a pan that is too hot: the outside burns before the centre sets. Medium-low heat is enough.
More from the cat
- Keep the apple pieces small so the balls close neatly around them.
- Turn early and often for the roundest shape.
- A knitting needle or wooden skewer works better than a fork for turning.
Storage
Best eaten fresh. Cool leftovers, keep in an airtight container in the fridge for up to 2 days and warm in a 180 °C (160 °C fan) oven for 5-8 min.
