Pouding chômeur
Pouding chômeur, the poor man's pudding, comes from Québec during the Depression. A plain cake batter is covered with hot syrup before baking; the cake rises through it while the syrup sinks to form a rich sauce underneath. Today it is made with maple syrup and cream.
