Potatoes sarladaises
Potatoes sarladaises come from the Périgord region of south-west France, an area famous for cooking in rendered duck fat, and pair sliced potato with plenty of garlic and parsley. It's a simple dish, but the combination of browned, garlicky potato and rich fat makes it a classic alongside roasted meats.
