Pain de Gênes
Pain de Gênes is a dense French almond cake named after the city of Genoa, traditionally made with a high proportion of ground almonds and little flour. Its appeal is the deeply moist, nutty crumb, often finished with a thin, crisp crust of toasted almonds.
