Orecchiette
Orecchiette are small, ear-shaped pasta shapes from Puglia in southern Italy, traditionally shaped by hand with a simple table knife and a flick of the thumb. Their cupped shape and rough surface make them especially good at holding onto chunky, garlicky vegetable sauces like this one.
