Biang biang noodles

Biang biang noodles are a street food staple of Shaanxi province in north-west China, named for the slapping sound the dough makes as it's stretched and torn into wide, chewy ribbons. What makes them special is the contrast between the dense, satisfying noodle and the fiery splash of hot oil poured over raw garlic and chilli just before serving.
